This Recipe is a RAW version of Thai lemon soup and can also be heated after blending.
Ingredients
1 cup cashew nuts
Around 4 cups water
6-8 dates (more if you want sweeter)
Fresh Ginger -about thumb nail
1/4 shallot
1/2 – 1 chili depending on how strong you like it
1 sprig fresh coriander
2 garlic cloves
Pinch of paprika
6 kaffir lime leaves
1/2 stem lemon grass
1/2 tsp lemon zest
1/2 tsp turmeric
1/2 tsp coriander seeds
1/2 tsp cumin seeds
Pinch nutmeg
Pinch black peppercorn
1/2 tsp salt
1/2 cup lemon juice
1/2 cup melted coconut oil.
Salt to taste.

Steps
- Blend everything in a high speed blender, until it heats up.
- Garnish with julienned carrots, coriander, cashews, chili and beetroot.
Taste as you go and adjust the seasoning.
