This rainbow dessert tasted as good as it looked. There are 5 layers to it and very easy to make, although a bit time consuming.
Base:
1 1/2 cups cashews
1/2 tsp vanilla
1/2 cup honey/ agave/ maple syrup
1 Tbs melted coconut oil
Mix in a food processor until well combined and spread into a spring form base.
Filling:
2 cups soaked cashews
1cup macadamia nuts
1 cup melted coconut oil
1/2 cup honey/agave
1/4 cup lemon juice
1 tsp vanilla
Blend until smooth in a Vitamix.
Making the rainbow:
Then separate into 5 containers, add fruit for colouring and blend again with a handblender:
Yellow – add pineapple or mango
Purple – add blueberries or blackberries
Green – add spirulina and kiwi fruit
Orange – add rock melon or persimmon
Pink – add strawberries or raspberries
Layer them into the spring form cake tin and freeze for a few hours Decorate however you want to – we decorated with cocoa butter and mixed berries.
