You need a food processor for this recipe.
3 C shredded coconut
¼ C maple syrup
1 tsp vanilla essence
Pinch of salt
For supercharged variations, you can add cacao nibs, cacao powder or goji berries. Or for a wonderful flavour add a few drops of organic peppermint oil.
- Mix all these ingredients together for about 6-12 minutes. Eventually the coconut starts to break down and get very oily, like the texture of smooth
peanut butter. Keep mixing until it is smooth and creamy. You might need to stop and scrap down the sides every now and then.
- Spoon into molds – I use silicon ice cube trays and press down firmly.
- Freeze and then take them out of the mold and enjoy.
