Base
1 1/2 cups cashews
1/2 tsp vanilla
1/2 cup maple syrup
1 Tbs melted coconut oil
Method
Mix in a food processor until well combined and spread into a springform base.
Filling
2 cups soaked cashews
1 cup macadamia nuts
1 cup melted coconut oil
1/2 cup maple syrup
1/4 cup lemon juice
1 tsp vanilla
Method
- Blend until smooth in a #Vitamix.
Purple – add blueberries
Pink – add strawberries or raspberries
Assembly
- Layer them into the springform cake tin and freeze for a few hours.
- Decorate however you want to.
