
Lemon Fudge
You need a Vitamix and a food processor or this recipe
Base:
1 ½ C almonds
½ C shredded coconut
½ C pitted fresh dates
¼ C melted coconut oil
½ tsp vanilla paste
Pinch of salt
Steps
• Process all these ingredients in a food processor until sticky and doughy.
• Press into a tin (any shape you want) that has a push out base
Lemon fudge:
Ingredients
4 heaped Tbls shredded coconut
4 Tbls fresh coconut meat
4 Tbls melted coconut oil
4 tsp maple syrup
Juice from 1-2 fresh lemons depending on how tart you want it
Method
- Mix all these ingredients in your Vitamix until a smooth consistency is reached
- Pour onto base
- Garnish with lemon or lime zest and freeze to set for 2 hours.
